This hearty homemade soup will warm and nourish you on cold winter days. Plus we've added in an excellent ingredient for those who need to nourish their gut.
1 large onion chopped
2 leeks chopped
3 medium potatoes peeled*
250g butter beans**
1 litre vegetable stock
1 bay leaf
Sea Salt and Black Pepper
* If like me you suffer from pre-diabetes or often feel your sugar levels dipping, replace the potato with sweet potato.

Saute the onions in the butter over a low heat for about 5 minutes.
Cube the potatoes and add with the chopped leeks and butter beans.
Add the vegetable stock and bay leave and bring to the boil. Simmer until the vegetables are tender.
remove the bay leaf, liquidize half the soup, then return it to the pan. Reheat and ladle into bowls to serve.
The magic beans! Did you know that butter beans are an excellent source of dietary fiber, protein and many other important vitamins and minerals? They can reduce blood sugar, improve cholesterol levels and help maintain a healthy gut.
I do like a soft homemade slice of bread with my soup. A little treat on a cold winter day.
